By doing so we allow some internal stresses from rapid quenching to relieve while still retaining much improved mechanical properties compared prior austenite grain structure.
Before starting any hardening process though some things must be considered such as knowing right temperatures for desired hardness levels or selecting proper medium for quick cooling (quench) based on thicknesses/geometry/type etc., because when done improperly these processes can lead either over-hardened/brittle material that will break under stress or too soft material with low strength characteristics .
